Afternoon everyone – hope you are having a lovely Easter… we have had a fab time making this gorgeous shortbread – its lovely warm from the oven if you cant wait… or sometimes we have a slice with a rich chocolate pot as a real treat – hope you enjoy giving it a try and Happy Easter to you all XX
160g of self raising flour
zest of 1 orange
60g of caster sugar
1 large egg yolk.
Heat oven to 160C / 140C fan / gas 3
Line baking tray with greaseproof
Put flour / orange rind and butter into bowl and rub mixture together using finger tops until it resembles breadcrumbs
Add egg yolk to bring mixture together… be patient – it will come together!
Turn out onto a floured surface and roll out until 1 cm thick
Transfer to baking tray
Place in fridge for 30 mins
Take out and bake for 25 / 30 minutes or until golden brown
Take out of oven and cover with caster sugar whilst still warm
