Raspberry sponge drops
SPONGE DROPS
Afternoon everyone – thanks so much for taking part in our home baking during this crazy time…. here’s another family favourite that we thought you might like…a bit lighter than a scone and a tea time treat X.. the recipie says jam.. but lemon curd works just as well.. happy baking and dont forget to share your creations X
Ingredients:
2 eggs
3oz (75g) caster sugar
3oz (75g) self raising flour
Jam
Whipped cream

  1. Line a baking sheet of two with greaseproof paper
  2. Pre heat oven to 200C/400F / Gas Mark 6
  3. Make sponge mixture – break eggs into a largish bowl and whisk lightly.. add sugar and whisk well until thick and creamy and almost white…. an electronic whisk is a good idea – but if you want to kill some time – it works well by hand with an enthusiastic helper!
  4. Lightly fold in the flour
  5. Place small spoonfuls – well apart, on the baking trays and bake for about 5 minutes
  6. Take out of the oven and allow to cool, sandwich together with jam and cream and sprinkle top with a little extra caster sugar
  7. Place in fridge for 30 mins
